VINIFICATION AND MATURING
Mechanical harvesting of the berries at full maturity on October 5 (Cab.S) and September 26 (Marselan)
Cold pre-fermentation maceration.
Alcoholic fermentation in vats.
Daily reassembly.
Malolactic fermentation under marc.
Aged for 12 months in 225L barrels.
Not glued.
Bottled on November 26, 2024.
TASTING
Serve around 16°C.
Nose: peppery cherry
Palate: frank attack of black fruit, spicy indulgence in the middle, finish on a melted woodiness.
