Peasant Note #48 | Planting the Future



🤙 Almost a month without a #peasant post , some of you may be worried... Don't worry, I didn't have the joy of starting the year by cutting my finger like last year and that's already something!

🥶 I still don't like winter, but this season has the advantage of giving us time to prepare for what's next. Very soon March and its #spring will come to start the ballet towards summer.

💪 Because during this time, there are still so many projects to carry out!

🍷 Firstly, the wines will soon leave their winter sleep before joining the bottles.
👶 A little new product, the Asterios vintage, celebrating a happy event that occurred on 02/10… I’ll tell you more very soon!

☀️ So, to mark the year and wrap up with the mythology, I'm going to plant two #grape varieties #greeks !
-In white: the #Assyrtiko of the island of #Santorini
-In red: the #Agiorgitiko of the #Peloponnese
😎 These two heat-resistant grape varieties will be particularly suitable for keeping the #freshness that I like to keep in my wines.
They have recently been added to the specifications of my appellation and it is therefore with pride that I will be able to claim the entirety of my production as IGP Coteaux d'Ensérune!

🍋🍊 Finally, on the citrus liqueur side: the lemons and oranges will soon be zested before macerating for a long time to create the new Limoncello and Arancello.

But this year, needless to say, I can't zest 2,000 citrus fruits with a peeler again! I've set my sights on a zester I found in Japan that should help me greatly.
